Food: Stir-fried Beansprout


Ingredients: (serving 2 people)


  • 2 tablespoon coconut oil
  • 2 garlic cloves
  • half onion
  • 3 handfuls of beansprout (mixed with vegetables - bought anywhere in the Philippine market)
  • 2 sweet potatoes
  • oyster sauce
  • salt and pepper to taste
  • Basil (for garnish)
Process:
  • chop the garlic and onion to small pieces. Then slice the sweet potatoes to your preferred shape and size.
  • Rinse the beansprout on a strainer.
  • heat the pan into medium heat. add coconut oil (cooking oil)
  • Saute garlic and onion.
  • add the sweet potatoes then stir-fry.
  • When sweet potatoes softens. Add the beansprout (with mixed vegetables). stir.
  • Wait until beansprout becomes translucent.
  • sprinkle salt and pepper to taste.
  • Then pour oyster sauce. stir.
  • Set fire into low heat. then wait until it becomes a bit thick and saucey.
  • sprinkle basil for garnish (optional)
Instead of stir-fried noodles, beansprout has the same texture as of the noodles and more healthier. Enjoy!

Food: Red Chicken Curry

Ingredients: (serving 3 people)
  • 1 1/2 whole chicken breast cut into 6 pieces.
  • 2 tablespoon red curry paste (Real Thai)
  • 2 carrots
  • Broccoli (optional)
  • 1/2 white onion
  • 3 garlic cloves
  • 3 tablespoon coconut oil (cooking oil)
  • Half can of coconut milk
  • salt, pepper and coconut sugar (brown sugar) to taste
  • Parsley (for garnish)
Process of Chicken curry:

  • Garlic and onion chop into small pieces. carrots readily chop.
  • heat the pan medium heat, then add coconut oil.
  • saute the garlic and onion.
  • add the chicken breasts then stir fry.
  • Make sure the chicken is cooked but not overcooked. then add the coconut milk, carrots then red curry paste. Stir.
  • sprinkle salt, pepper and coconut sugar (brown sugar) to taste. stir.
  • wait until the sauce thickens or wait for 10-15 minutes under medium low heat. (depending on your observation when the sauce becomes thick, taste it to know if it is ready).
  • When its done, garnish with Parsley leaf and steamed broccoli (optional)
Enjoy! This is awesome paired with Red Rice and tea beverage to minimize the heat (hot chili). Thai curry paste is extremely hot!


Food: Tuna Spaghetti with light side dish

Ingredients (Spaghetti) serving 3 people

  • 1 can Diced tomato
  • 1 can tomato sauce
  • canned Tuna
  • 50 grams Barilla whole grain pasta
  • onion
  • garlic
  • salt, pepper and coconut sugar (brown sugar) to taste
  • Thyme for garnish
Ingredients for side dish
  • Fresh grapes
  • Mixed veggies (sweet corn, carrots and green peas)
Process (Spaghetti):


  • Roughly chop onion and garlic.
  • Heat the pan, medium heat.
  • Saute onion, then garlic.
  • Add the Tuna (oil removed) then Saute
  • Pour diced tomato and tomato sauce. Stir.
  • Sprinkle salt, pepper and brown/coconut sugar to taste. stir.
  • then add the pasta, wait until the pasta is cooked along with the sauce.
  • When it's done, add Thyme for garnishing (optional)
Process (mixed veggies)
  • Heat the pan, medium low. Heat it with butter (Don't add cooking oil)
  • After butter melts, add garlic then saute. Next is onion then saute.
  • Add the mixed veggies. saute until cooked. (do not overcook!)
